lepsita nuda, by any other name, tastes as good, but be sure to check the spore print, as there are violet cortinarius lookalikes, and as nuda specimens age, they start to resemble several difficult to identify tricholoma

morchella angusticeps

morchella, any species we can find, but around here, mostly angusticeps. However, we see lots of people gathering verpa and gyromitra in the name of morels

marasmius oreades, the fabled "fairy ring mushroom", which we harvest from neighborhood lawns during warm, moist Summer months. It has marvelous, robust flavor, but remember, many "baddies" grow in fairy rings as well- see our warnings in safety rules

lepiota procera, the "Parasol". While we like it, we don't recommend lepiota to beginners because of the number of toxic and suspect look-alikes

boletus castaneus, the "chestnut bolete." We never find it in great quantity, but its sweet, cashew-like flavor is outstanding

lactarius deliciosus, another of the hard to find species in our area, but we gather it eagerly. The gruanular orange meat has a flavor resembling fresh, butter-fried carrots

cantharellus cibarius, we have found these in great quantities in moist forests in late Summer. Slow to become wormy. Delightful faintly apricot bouquet, and marvelous flavor

pleurotus ostreatus, common in older poplar forests here in late, moist Springs. Faint anise-like bouquet in fresh specimens. Great ingredient in pasta sauces, and in beef stroganoff

agaricus campestris, we have found it in fairy rings in large grassy areas. Rich flavor, but be sure you have a spore print: we have found it growing amidst look-alike buttons of lepiota naucinus (nick-named lepiota nauseous by a friend of ours :)
